Mochiko Chicken

mochiko chicken- yummy yummy yummy

2 1/2 lbs boneless skinless chicken thighs, cut into small pieces (each piece should be about the size of two thumbs put together)

2 beaten eggs
5 tablespoons soy sauce
3 tablespoons sugar
4 tablespoons mochiko
4 tablespoons cornstarch
2 cloves garlic
1/2 teaspoon salt
1/4 cup green onion, finely chopped
1 tablespoon toasted sesame seeds
2 teaspoons fresh ginger, grated

oil for frying

mix together ingredients from eggs to ginger. place chicken pieces in mixture and marinate for at least 5 hours. can be marinated overnight. fry chicken in 1 inch of hot oil until medium brown on both sides. (i usually fry meat at 375 degrees; however, when i tried this recipe, i just used a medium high setting on an electric range without checking the temperature, and it turned out great.) finished plate can be garnished with fresh green onion. i know it sounds fried and greasy, but you'll be surprised by how light and crispy it turns out. and it's so fantastic tasting that you probably won't care too much about its lack of nutritional value. enjoy! we inhaled it.

Thanks for this recipe Michelle. I'm going to buy some mochiko this week at Uwajimaya, the Japanese grocery store in Seattle. Can't wait!!! Ahh, who cares about nutritional value... I'll just steam some brocolli on the side and consider it a balanced meal :-)
