Crispy Oatmeal Chocolate Chip Cookies

These cookies are my favorite!  I can easily eat more than 1/2 a dozen in one day.  They are meant to be flat and crispy all the way through, but you can bake them for less time for a chewier center.

1/2 cup unsalted butter, room temp
1/4 cup coconut oil, room temp
1 cup light brown sugar
1/2 cup white sugar
1 egg
1/4 cup water
1 tsp vanilla extract
3 cups oatmeal
1 cup flour
1 tsp cinnamon
1 tsp salt
1/2 tsp baking soda
1 bag dark chocolate chips (Ghirardelli's 60% cacao, or dark chocolate chunks)

Preheat oven to 350F.  Cream butter, coconut oil, brown sugar and white sugar.  Add egg, water and vanilla and mix.  Add oatmeal, flour, cinnamon, salt, and baking soda and mix.  Dough will be wet, almost like a very thick batter.  Add chocolate chips and mix.  Bake at 350 for 12-15 minutes (less time for chewier cookies, more time for crispy).  Cookies will flatten considerably, so keep that in mind when placing dough on cookie sheet. Dough can also be refrigerated for 15-30 minutes for easier handling.
